Garlic Butter Crumb Tomatoes
- 4 fresh tomatoes
- 1 cup bread crumbs or panko
- 4 tbsps melted butter
- 2 cloves fresh garlic, pressed
- 1/2 tsp dried basil
- 1/4 cup finely grated, Dry Jack or Parmesan cheese
- Kosher salt & freshly ground black pepper
Cut tomatoes into halves.
Melt butter until bubbly in microwave. Add pressed garlic and dried basil.
In a separate bowl, toss bread crumbs and butter mixture until moistened. Mix in cheese, plus salt and pepper to taste.
Mound bread crumb mixture on top of tomato halves and broil 10 inches from heat source until golden brown.
Remove from oven and garnish with fresh parsley.
